What food dyes add before the first bite—and what the label can tell us.

Color speaks early.

Before flavor reaches the tongue, appearance begins shaping expectation. A red drink may suggest berry or cherry. Yellow can point toward lemon. A familiar shade can carry us toward a childhood candy, a holiday table or a flavor we already know by heart.

Food makers work with those associations. Color additives can restore color changed by processing, keep batches visually consistent, identify a flavor or create an appearance designed to catch the eye. That makes color part of both the formulation and the message.

Secret Ingredients begins there: with the space between what a product shows us and what its label reveals.

What a color additive does

A color additive is any substance that gives color to a food, drug, cosmetic or certain medical devices. In food, it may deepen a color already present, replace color lost during processing or introduce a shade created through formulation.

The presence of added color tells us about a product’s construction. It says little by itself about the quality of someone’s full diet, the meaning a food holds or the experience of the person eating it.

That distinction matters. Bright food can be joyful, culturally meaningful and deeply familiar. It can also be carefully formulated. Both can be true in the same bite.

Two regulatory categories

The FDA separates permitted food colors into two broad groups.

Certified colors are synthetically produced and must undergo FDA batch certification. Familiar names include Red 40, Yellow 5, Yellow 6, Blue 1, Blue 2 and Green 3. Before certification, the FDA evaluates whether a batch meets requirements for identity and purity, including specifications for certain impurities and heavy metals.

Colors exempt from certification generally come from plant, mineral or animal sources. Examples include annatto extract, beet powder, beta-carotene, grape-skin extract, caramel color and carmine. “Exempt” refers to the batch-certification process. These colors still require FDA authorization for their permitted uses.

The two categories describe regulation and origin. A useful comparison also considers source, processing, dose, use and individual sensitivity.

What the ingredient list reveals

Certified colors must appear by their listed names or accepted abbreviations, such as FD&C Red No. 40 or Red 40. This gives readers a specific term to recognize and research.

Many certification-exempt colors may appear under a collective phrase such as artificial color, artificial coloring or color added. Some appear by name. Carmine and cochineal extract must be named because they can cause allergic reactions in some people.

The label therefore offers different levels of detail depending on the color used.

What the label may say What it tells you
Red 40, Yellow 5, Yellow 6, Blue 1, Blue 2 or Green 3 A certified synthetic color is present. The named color gives you a precise research term.
Carmine or cochineal extract A red color derived from cochineal insects is present. FDA requires naming it specifically.
Annatto extract, beet powder, beta-carotene or grape-skin extract A color exempt from batch certification is named by source.
Caramel color A certification-exempt brown color is present. The phrase identifies a category rather than one single formulation.
Artificial color, artificial coloring or color added One or more permitted certification-exempt colors may be grouped under a general declaration.

Where the evidence becomes specific

Broad claims about “food dyes” can make a varied category sound like one substance with one effect. Research becomes more useful when it names the color, population, exposure and outcome being studied.

One area of sustained attention is children’s behavior. A 2021 assessment from California’s Office of Environmental Health Hazard Assessment concluded that synthetic food dyes can affect neurobehavior in some children and that sensitivity varies. Its scope is a susceptible subset of children; Black-women-specific effects remain a separate research question.

Allergic-type reactions also require specificity. FDA materials identify Yellow 5 as a possible trigger for a small number of susceptible people, and its presence must be declared by name. Carmine and cochineal receive specific label treatment for a similar reason: the value of the information lies in helping a person connect a known sensitivity with a named ingredient.

These examples show the strongest use of a label. It becomes a record that can support observation across products and over time.

Color also has a context

Exposure begins long before an ingredient list reaches someone’s hand. It takes shape through the products stocked nearby, what fits the household budget, what appears in schools and community settings, which foods receive the heaviest promotion and how often a particular formulation enters daily life.

A 2022 study combined measured concentrations of seven certified food colors with dietary-recall data from the National Health and Nutrition Examination Survey. Among participants who consumed at least one product containing an artificial food color during the survey period, the researchers estimated higher total intake among non-Hispanic Black children than among non-Hispanic White children. The same direction appeared among women of childbearing age. Lower income and lower educational attainment were also associated with higher estimated intake in parts of the analysis.

The study could identify a pattern, while its design left the reasons open. The researchers cited product availability and differences between neighborhood food environments as possibilities for future study. Dietary recalls, changing formulations and the timing of the food measurements also introduced uncertainty.

The label remains useful. The wider environment helps explain how often someone may encounter what the label names.

Red 3 shows how regulation can change

In January 2025, the FDA revoked authorization for Red 3 in food and ingested drugs under the Delaney Clause, which bars authorization of an additive shown to cause cancer in humans or animals. Food manufacturers have until January 15, 2027, and makers of ingested drugs have until January 18, 2028, to reformulate.

The agency also explained that the finding behind the legal action involved high exposures in male rats through a rat-specific hormonal mechanism. Available human evidence supports a different interpretation of risk. Holding both facts together gives a more accurate picture: the authorization changed, and the basis for that change carries important scientific context.

During the transition, Red 3 may still appear on some U.S. labels until the applicable deadline.

A closer label read

Begin with the product in front of you.

  1. Find the color language. Look for a numbered color, a named source or a general phrase such as “color added.”
  2. Name the category. Determine whether the label points to a certified color or one exempt from certification.
  3. Keep the full formulation in view. Color is one part of the ingredient list and one part of the product.
  4. Notice patterns that matter to you. A product photo, ingredient list and brief note can make repeated observations easier to compare.
  5. Bring persistent concerns into care. A clinician or registered dietitian can help interpret a suspected reaction in the context of symptoms, exposures and health history.

This is research at the scale of daily life: a specific name, a visible pattern and enough context to ask a better question.

Color can hold more than chemistry

Color also carries pleasure, celebration, appetite, nostalgia and culture. A closer look leaves room for all of it.

The useful question reaches beyond whether a shade is “natural” or “artificial.” It asks what creates the color, how clearly that information appears, what the evidence says about the specific additive and how that knowledge fits the life of the person reading the label.

One ingredient list can be a beginning. One named color can open the next layer of the story.
